Dan's back!!

For the past two weeks, Dan has been in CT. He was working on campus this summer but since it's the seven week break between Spring and Fall semester he was off work and I felt like he could get a lot more done back at his house than if he was just in our apartment all day while I was at work. Dan's really good about being productive and cleaning the place, but there's only so much to do. In CT, he could work for his Dad and brother and I thought it would be nice for him to get to spend some time with his family too. Although I missed him tremendously, it just made more sense. A big thanks to our friends Liz and Drew and Liz's mom for inviting me over for dinner and games and giving me something to do besides work while he was gone!

So Dan got back this afternoon. Here's a little conversation we had that I thought was funny and wanted to document...

Dan: I'm gonna put on my basketball shorts

Me: I knew you were gonna wear those

Dan: 'Cause they're the coziest. They're not pajamas and they're not jeans.

Me: I disagree with that statement

Dan: They are pajamas?

Me: No

Dan: They are jeans?

Me: No

Dan: Oh! Sweatpants are the coziest?!

Me: I'M THE COZIEST!!!

Lucky 7

Since it's July 7th, I thought I'd post about my favorite number. Here are the reasons why it's lucky...

*When I was 7, the McCaughey septuplets were born. I became obsessed with those seven babies and loved to read magazine articles about them.

*I realized that this was my lucky number in Sophomore year of High School when that was my bus number. After a long day at school, I was always excited to see the bus that would bring me home.

*When I got my phone number, there were three "7s" in it.

*I got married on June 7th. When my mother in law mentioned it, I immediately knew it was the perfect date.

And if seven wasn't my lucky number, three would be because third times a charm has been true many times in my life!

Two Years!!

Happy two year anniversary to the love of my eternity!!! You are my everything and I love you with ALL my heart and I'm so glad you're mine forever!!! I had to post the song above because it's my new favorite love song and I totally would have played it at our wedding if it was around back then. I also feel that if I had to relive my life, I'd still choose Dan in a heartbeat. I can't imagine anyone being more perfect for me than he is and I love being his other half.

We had so much fun together, Dan went out early and got me breakfast, then we enjoyed a couple's massage and a yummy dinner at Texas Roadhouse. We picked up some cute Disney shirts to wear for our upcoming Disney Cruise November 2015. It's always nice when things fall on Saturday so then we're both home from work.

I'm excited to think what this next year of marriage will bring; probably the biggest thing is Dan will graduate and then we'll head back to CT. It will be awesome to be closer to family, although I'm not excited about lugging all our stuff across the country. I'm also looking forward to the little everyday things, like making dinner together, laughing, watching our shows and being together. I think it's the little things that makes marriage so fun and full of love!! Dan's the cutest and he always melts my heart!! I adore being married to my best friend!!

My 24th Birthday!

Today I celebrated my 24th Birthday. Unfortunately, it was probably hopefully the worst birthday ever. First, one of my coworkers had a major seizure and when it ended, she wasn't breathing and didn't have a pulse. I called 911 while another coworker, who is also an RN, preformed CPR. Luckily my coworker started breathing again before the paramedics arrived, but we were all really surprised since she never had a seizure before. Then I had a patient to see in Tetonia (about an hour away). When I finished, it was dark and snowing pretty hard. As I was driving back on the unpaved, unplowed road, I couldn't see where the edge of the road ended as the snow had drifted and levelled the road with the ditches on both sides. I drove off the road and tumbled into the side ditch. My car was completely stuck. A nice woman tried to help shovel me out, but the car was in too deep so she called a tow truck. I was covered in snow and freezing. The tow truck pulled me out and then I very carefully headed back and went straight to my party.

Dan did an AMAZING job and everything looked so cute and perfect!
We celebrated with our friends and my sister. Unfortunately, I was just so exhausted from everything that day that I kept having to excuse myself for a few minutes to go lay down in bed :(
I got so many cute and fun treats! Some of these treats were a new purse from Fossil, a watch and bracelets, movies, a jacket from Anthro, and some new clothes! Thank you everyone!
Then I had my favorite carrot cake. I've had it almost every year since my very first birthday. It's so moist and delicious!
A HUGE thank you to Dan for everything he did for my party!!!  I wish I could have enjoyed my party more. It made me sad that he had worked so hard to make it perfect but I was just feeling so tired and sick. At least the year can only get better, right? I hope so!! XO

I really wanted to be good about keeping the blog updated. And then work got busy and before I knew it, it had been months since my last post. But now it's Friday and I have time to catch up on stuffs. I saw this today and had to post it because it's exactly how I feel!

And I love this too because I feel it describes most of my patients...

Trader Joe Treats!

The closest Trader Joe's is in Salt Lake City. It's about four hours away. Dan and I stop by whenever we're there, but it's not too often. A few weeks ago, My mom offered that I could make a list of treats I wanted and she would send them to me. I got her surprise package today and was so excited to see the above treats. Probably what I was the most excited about was the cookie butter. It's somewhat like peanut butter, but made out of crushed spiced cookies. She sent me a jar of smooth and a jar of crunchy. It's really yummy! Dan and I have enjoyed dipping ginger cookies into it as well as spooning it straight out of the jar. I bet it would be delicious to dip apple slices into it. I also asked for cinnamon pita chips because I saw a recipe for fruit salsa served with cinnamon sugar chips. It's made of diced peaches, strawberries and kiwi with a little jam stirred in too. That sounds like a fun summer snack!

Swedish Meatballs :)

Swedish meatballs have always been one of my favorite comfort foods, right up there with mashed potatoes and mac and cheese. I always looked forward to when my mom made them, or lately, when she got them from IKEA. When we were engaged, I tried to make them for Dan so he could experience the deliciousness, but they came out horrible! I used turkey for the meatballs and they were bland and a bit mushy, but the worst thing about them was the gravy. It had a strange, bitter flavor and gave Dan a stomach ache. Luckily, when we visited my parents' house during Christmas break, my mom served him IKEA's Swedish meatballs along with the gravy, lingonberries and mashed potatoes and he was able to see that they actually were yummy when done correctly. Last week, my mom sent me a recipe for them that she thought looked really good. I wanted a chance to redeem myself and this looked like a good opportunity. Dan and I made them for Sunday dinner today and they came out SOOO good! Exactly how I remember them and how they are supposed to taste!

We had them with egg noodles, lingonberry sauce and French green beans... and raspberry lemonaid!

Here's a link to the recipe... http://www.simplyrecipes.com/recipes/swedish_meatballs/ the only changes I made were to halve the recipe (since we weren't feeding vikings) and to substitute allspice for cardamom. I could eat these all the time! Next time we make them (which will be soon) we'll try them with mashed potatoes. YUMMMM!!!
